Ingredients
½ cup light coconut milk (or water as a substitute)
1 cup thick coconut milk
1 tbsp Kirihodi Mix (adjust to taste)
4 red onions or ½ medium onion, sliced
2 green chillies, slit
1 tsp Maldive fish flakes (optional)
Salt to taste
Juice of 1 lime
Instructions
In a saucepan, combine onions, Kirihodi Mix, salt, Maldive fish flakes, green chillies, and light coconut milk (or water).
Bring to a gentle boil until the flavors infuse.
Reduce the heat, stir in the thick coconut milk, and let simmer until creamy and fragrant.
Remove from the heat and finish with lime juice. Adjust seasoning to taste
Serving Idea
Serve warm with rice, dhal curry, or beans curry. Its mild flavor makes it a versatile base for any white curry and an essential dish for a balanced Sri Lankan spread.
